Creamy Pesto Tortellini
This recipe is another easy and delicious appetizer that takes only a few minutes to whip up. Tortellini is the perfect base for an appetizer because they already have great flavor. Pair it with some tomatoes or roasted bell peppers, basil, and a sauce, and you have a dish that is universally loved. If you need them dairy free or gluten free, there are great brands out there like Kitehill you can use. You can also make the pesto homemade if you want to! These are so great to pop in your mouth and I think all your guests will agree.
Creamy Pesto Tortellini
makes one dozen
12 cheese tortellini, cooked according to directions.
12 cherry or grape tomatoes
12 basil leaves
3 Tablespoons prepared pesto
3 Tablespoons mayonnaise
balsamic reduction drizzle
- Place a cooked tortellini on a place and top with basil and a tomato, skewer with a toothpick.
- In a small bowl, mix the pesto and mayonnaise and then dollop on the serving platter.
- Place the tortellini skewer on top of each pesto dollop. Drizzle with balsamic reduction and serve room temperature or warm.
A handful of ingredients that can be prepared ahead of time make this so simple and delicious appetizer.
I cooked my tortellini ahead of time and just drizzled with a little oil to keep them tender.
The creamy pesto is so easy, just store-bought pesto (I love the Costco brand) and mayonnaise. You will love this and want it on all the things, it is heavenly on a sandwich.
Mix it up
spoon it on to your platter.
It is easier to push the basil on the top of toothpick sometimes. just a tomato on top of the tortellini and then a toothpick.
