Shrimp Guacamole Cups
These are almost like itty-bitty shrimp tacos, a crunchy shell, creamy guac, sweet shrimp, and a creamy and spicy sauce. This is such a great appetizer, my family loved them, I especially loved them in the mini peppers, it was fresh and crisp. The best part is you can cook the shrimp or just buy some shrimp already made from the store. Use store-bought guacamole and mix up a two-ingredient spicy sauce. These are gluten free, dairy free, and easily customizable.
Shrimp Guacamole Cups
makes one dozen
12 shrimp, de-veined and tails removed
1/2 teaspoon chili powder
salt and pepper
12 scoop tortilla chips or halved mini bell peppers
juice of half a lime
12 teaspoons prepared guacamole
1 cup mayonnaise or Greek yogurt
2 Tablespoons chipotle adobo sauce
cilantro to garnish.
- Preheat a pan at medium-high heat. Season the shrimp with the chili powder, salt, and pepper. then add to the hot pan. Cook until pink and then move to a plate to cool.
- Scoop the guacamole into the chip cups or mini bell peppers and place the cooked shrimp on top. Squeeze lime juice over.
- In a small bowl, combine the mayo/yogurt and the chipotle until it is a sauce. Drizzle the sauce over the shrimp cup and garnish with cilantro.
This is all you need for these little cups of goodness.
I love using frozen shrimp, I just thaw it in the fridge or place in a colander and spray with cool water.
This sauce is spicy but so good. just yogurt or mayo and some chipotle sauce. You can grab a jar of the stuff in the Hispanic section of your grocery store.

add acid with lime juice that will also help the guacamole stay green.
I used a squeeze bottle to get my chipotle sauce on the top. Use a zip lock bag with the corner snipped off to do the same thing. throw some cilantro on there and you are done.
