French Carrot Salad
When I was in junior high, I went on a trip with my class to France and Spain. I truly did not appreciate how wonderful Spain was but I was already obsessed with France so I thrived! One thing we had consistently was this Carrot Salad. Very simple with some fresh herbs and a light dressing that had some tang and it was perfect for the warm days. If you have a bunch of carrots, this is the perfect salad to make, it is only a few ingredients and it pairs beautifully with so many dishes. It is vegan, whole30, low carb, gluten free and dairy free.
French Carrot Salad
1 pound shredded carrots
1/4 cup parsley, chopped
3 Tablespoons green onion, thinly sliced
3 Tablespoons olive oil
1 Tablespoon Dijon mustard
1 Tablespoon whole grain mustard
2 Tablespoon lemon juice, about 1 lemon
2 Tablespoon honey or maple syrup (omit for Whole30 and low carb)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
- In a bowl. combine the carrots, parsley, and green onion.
- in a small bowl or jar, combine the remaining ingredients to make a dressing and either whisk together or seal and shake the jar.
- Pour the dressing over the carrot mixture and toss until all combined.
I love using those bags of pre-shredded carrots but a food processor or box grater do the job just as easily.
I prefer to make dressings in jars so I just shake them up and they are already in the jar to store. Just add everything in and shake!
Pour it over
And toss! It can be served right away or even a couple days later, the carrots hold up very well.
