Honey Mustard Kale Salad
Here is a salad that only takes a few minutes to whip up and it is simply delicious. Packed with plant-based protein powerhouse, quinoa, and you can add in your favorite protein to amp it up even more. This is vegan, gluten free, dairy free, and if you swap the quinoa for protein, the dressing can be adapted to be Whole30 and low carb. This is also perfect for prepping ahead, kale gets better with dressing and not soggy.
Honey Mustard Kale Salad
Kale, stems removed and chopped
Shredded Carrots
Quinoa, cooked and cooled
Sliced almonds
Celery
Optional protein - chicken, salmon, crispy tofu, chickpeas
Dressing
2 Tablespoons mayonnaise
1 Tablespoon Dijon mustard
1 Tablespoon Yellow mustard
1 Tablespoon grainy mustard
2 Tablespoons honey
pinch of salt
- In a bowl toss the salad ingredients together. In a jar, shake the dressing ingredients and pour over the salad.
** Swap the honey for maple syrup if vegan or monkfruit for low carb or a softened date for Whole30
