Totchos
There is a restaurant in the area I grew up that had these Irish Nachos which was basically loaded fries - they were so delicious and frequently ordered as a group in my teen years. These are an epic ode to them but using tater tots. This is perfect for serving a crowd, parties, or a “fancy” side for dinner that the kids (and husbands) will be crazy over. Super simple and easy to adapt to whatever you are digging at the moment; you won’t be disappointed.
If you are dairy free, you can leave off the cheese or sprinkle your favorite plant-based cheese and use a DF Ranch. If you are vegan, use your favorite vegan products for the cheese, bacon, and ranch. Potato adverse can use those alternative tots or just use some broccoli and cauliflower florets in the place of tots. Any way you want them, they will probably become a favorite.
Totchos
1 bag tots*
8 oz shredded cheddar cheese
8 slices of bacon, cooked and crumbled
4 green onions, sliced
Ranch Dressing
Bake the tots according to the package directions, until browned and crispy
Sprinkle cheese and bacon all over and set under the broiler for 3-5 minutes
Once all melted, drizzle with Ranch and sprinkle the green onions over the top and serve immediately
*If you don’t want to use potato tots - use cauliflower tots or replace with cauliflower and broccoli florets, roast at 425 for about 15 minutes with a little salt and pepper.
Only a few ingredients and it is so good.
You want to make sure the tots are super crispy first, so they keep the crunch.

Then the bacon crumbles and pop it into the oven, under a hot broiler.
OOOOOHHHHH man, now ready for the final touches.
