Cheeseburger Potato Skins
I feel like if you have appetizers for a casual gathering, you have to have potato skins. In fact, my husband asks for potato skins for his birthday for breakfast! If you want to mix it up, pair it with another favorite, cheeseburgers! These are super easy to whip together, and everyone will love it, my kids inhaled these. Wanna make it extra? Throw some crispy bacon on top, saute some mushrooms with the beef, switch the cheeses, whatever your favorite burger toppings are, GET IT! You know I have to give the options to make it right for everyone too…
Vegan - swap the beef for some plant-based crumbles and use some vegan cheese
gluten free - already done!
dairy free - use some plant-based cheese
Whole30 - omit the cheese and mix the meat with a little mayonnaise and chopped pickles. Make sure your condiments are compliant
low carb - swap the potatoes baby peppers, zucchini boats, or scatter over cauliflower florets like nachos….
Cheeseburger Potato Skins
4 large russet potatoes, scrubbed clean
oil, salt, pepper
1 medium onion, diced
1 lb ground beef
salt and pepper
2 cups shredded cheddar cheese
Toppings - green onions, mustard, ketchup
Preheat the oven to 400. Pierce the potatoes with a fork all over, drizzle with oil, and liberally season with salt and pepper all over on a baking sheet. Bake until tender, about 1 hour. Remove from the oven and let cool for about 20 minutes to be able to handle.
Slice the potatoes in half and scoop out most of the inside of the potato, making a boat. Season with salt and pepper.
While the potatoes bake, heat a large pan on medium-high heat and then add oil, chopped onions, and sprinkle with salt and pepper. Once translucent, add in the meat and cook until browned, season with more salt and pepper to taste.
Spoon the meat and onion mixture into the boats and then sprinkle cheese over the top. Bake for 15-20 minutes until the cheese is melted and little browned. Remove from oven and squeeze some ketchup and mustard over and sprinkle with green onions. Serve!

The meat mixture is just onions and meat with salt and pepper, but you can totally go crazy with the flavors. Add mushrooms, or make them spicy, you do you boo!
To make my boats, I just use a spoon and leave a border around the edge and make sure that I don’t go all the way through to the skin. Save that goodness because you can make hashbrowns or an easy mashed potato craving is solved!
