Breakfast Brioche Bake
Want a delicious, easy, pretty and crowd pleasing breakfast? Look no further than this Brioche Bake, dotted with lemon curd, strawberry preserves, and cream cheese. It literally takes minutes to get into the oven and is perfect for any Spring breakfast. I personally think this would be perfect for Mother’s Day, something dad and the kids can totally make without a ton of mess. So make this for your mama, partner, mama-to-be, or any special lady or yourself!
Grab some pantry staples and a loaf of brioche or your favorite bread. This is easy to make diary free with some plant-based cream and cream cheese, gluten free with GF bread. This can even be a dessert, it is so good, just call it a bread pudding!
Breakfast Brioche Bake
5-6 cups Brioche bread, cubed
3/4 cup cream
2 eggs
2 Tablespoons light brown sugar
2 teaspoons vanilla
lemon curd
cream cheese , softened
strawberry preserves
- Preheat the oven to 350 and spray an 8x8 baking dish with oil.
- Place bread cubes in the baking dish evenly. Scatter dollops of lemon curd, cream cheese, and strawberry preserves all over the top, each one about 1 teaspoon.
- In a bowl, whisk the cream, eggs, sugar, and vanilla until all combined. Pour the mixture over the top carefully.
- Place in oven and bake for 25 minutes. Remove from oven and serve cooled or warm.
I grab my brioche at Trader Joe’s along with pretty much all the ingredients. You can totally switch these up to whatever you have on hand or prefer.
Cubed that bread up into 1” chunks and whisked the cream and eggs. Seriously this could not be more simple.
I love the richness of brioche but if it isn’t your jam, totally switch it up for your preferred bread.
I love the combination of strawberry and lemon, I just did little spoonfuls all over.
The cream cheese takes it over the top…
Pour over that luscious cream mixture carefully so it doesn’t spill over.
Annnnnnd bake!
