Guinness and Baileys Cream Cheese Brownies
I know it is a mouthful but you will definitely want these in your trap anyway! These have two of the most famous drinks of Ireland, Guinness and Baileys, and they are so good. The flavor is subtle and delicious, a cream cheese brownie is always a good idea in my book. And even better, these use a boxed mix for the brownie part! Only a few minutes to get these into the oven and you will have a decadent treat at the end of the night. You can use your favorite mix, including gluten and dairy free options. Use a plant-based cream cheese and grab the Almond milk Baileys for a dairy free option. Keep these in the fridge and celebrate St. Patty’s day without the corned beef!
Guinness and Baileys Cream Cheese Brownies
1 box brownie mix
1/3 cup Guinness or dark stout beef (pour and let sit at least an hour before using)
3 eggs, room temperature
1/2 cup vegetable oil
12 oz cream cheese (1 1/2 blocks), room temperature
1/4 cup Baileys or Irish Cream
1/2 teaspoon vanilla
1/2 cup granulated sugar
- Preheat the oven to 325 and line a square baking pan with parchment paper and butter or non-stick spray.
- In a bowl, combine the beer, 1 egg, and the oil until all frothy. Add in the brownie mix and stir until all combined. Scoop our 1/2 cup and reserve, then pour the rest of the batter into the prepared pan, spreading in an even layer.
- In a separate bowl, use a hand mixer to whip the cream cheese, Irish cream, vanilla, and sugar. Once it is completely smooth, add in the 2 remaining eggs and mix until combined. Pour over the top of the brownie layer and smooth.
- Take the reserved brownie batter and spoon dollops all over the top then take a toothpick and swirl.
- Bake for 45-50 minutes or until a toothpick inserted comes out clean. Let cool completely then use a plastic knife to cut.
I love that this uses a brownie mix, I always seem to have one in the pantry.
You just swap the water with the beer and it gives it a subtle flavor that is delicious.
Whisk it up and dump in the mix!
Clearly I moved to a larger bowl, it got a little messy. Take 1/2 cup of the batter and set it aside, this will help make the swirl on top that is so pretty.
Spread that into your pan.
Now to the cream cheese layer, just don’t add the eggs in first, I made that mistake and had to start over. So just do cream cheese, Irish Cream, sugar, and vanilla.
Use a stand or hand mixer to get it all together, then add in the eggs.
Pour it over the brownie batter and spread
Now grab your brownie batter that you set aside and spoon dollops all over the cream cheese layer.
It doesn’t have to be perfect, just get it all over.
Grab a toothpick and start zig-zagging to make the marble effect.
Swirled and ready for the oven! That’s it.
