What the heck are we eating this week?
Alrighty, week 2 of WTHAWETW, whew, that’s a bit much…I need to come up with a better acronym, stat! This week is all about family favorites that are easy. We are on the last week before spring break and I need to save my energy for that mayhem!
Monday
Using my Taco Tuna Salad to make some epic tuna melts. I always use sourdough and for this tuna, some pepper jack cheese, we are always stoked for tuna melt night!
Tuesday
Creamy Italian Chicken Soup is always good, we are expecting some rain and this is perfect with a side of garlic bread.
Wednesday
Weeknight Stir Fry is a family favorite because it is easy and the kids love it. We always have it with some microwave coconut basmati rice.
Thursday
Slow Cooker Onion Ranch Chicken is a fan favorite on the blog and I am serving it with some Mediterranean Lemon Roasted Vegetables for allllllll the nutrients and it cleans out the fridge.
Friday
The start of the weekend means Garlic Bread Pizza with a salad on the side, usually Caesar for us and fresh, crunchy veggies for the kiddos.
Saturday
Simple Shrimp Curry is perfect after a day of soccer, the kids will eat any dish with shrimp so its a win.
Sunday
Sunday Funday with some grilling! One of our faves are my Summer Pesto and Sausage Kabobs with a side of Grilled Potato Rounds - so good.
