Peanut Butter and Pretzel Blondies
I am a sucker for peanut butter and chocolate and peanut butter with pretzels so I thought, why not get all those delicious things together! I didn’t want a brownie because that would overpower the flavor and the peanuts could not shine as bright, the blondie was the natural choice. These are super simple to whip up and the kids can even help and I am sure you are like me, needing any and all activities to keep these kids engaged. You can tweak these to your tastes but these are pretty perfect, just imagine scoop of vanilla ice cream on top…
Peanut Butter and Pretzel Blondies
2 Cups plus 2 Tablespoons All Purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
12 Tablespoons unsalted butter, melted and cooled
1 cup light brown sugar
1/2 cup white sugar
2 large eggs
2 teaspoons vanilla
1 cup crumbled pretzles
1 cup Reeses mini cups
3/4 cup peanut butter chips
1/2 cup Reeses Pieces
1/2 cup roasted and salted peanuts
- Preheat the oven to 325 and place parchment paper in a 9x13 baking dish
- In a small bowl, mix the dry ingredients, flour baking soda, and salt
- In a large bowl or stand mixer, add the sugars and melted butter and mix until light and fluffy. Then add in the eggs, one at at time, until completely mixed, followed by the vanilla.
- Stir in the dry ingredients, just until combined. Then sprinkle in the add-ins, only stir to get them throughout.
- Spread into the baking dish and bake for 28-30 minutes or until a toothpick comes out clean.
- Cool on a wire rack before cutting into them. Store in a container in a cool space.

These add-ins make these blondies - the salty, crunchy, and sweet for the perfect bite!
Sugars and melted butter go in together in the stand mixer and get all fluffy, just like my chocolate chip cookies!
Eggs in there and blended in along with the vanilla.
Sprinkle in those dry ingredients, make sure to just mix until combined so they don’t get overworked and tough.
The batter or dough, whatever you call it, is ready for the mix-ins. If you want plain blondies, this is perfect!

Spread evenly in your baking dish. I learned a tip to crumple your parchment paper for a better fit, it works so well!
