Feta Salsa and The Easiest Steak Dinner
Love day is almost here and you might be thinking, “ What the heck am I going to make?” Well, everyone (who eats meat) loves a good steak dinner and the easiest way to fancy it up is with a steak topping. This Feta Salsa is sooooo good, it takes a minute to whip up and you will want to have it with your steak, in salads, on a cracker, eggs, or even just spoon it into your mouth. It is only 4 ingredients and it comes together in a bowl, ready for you to use.
The steak dinner is a guideline on how to whip it up in about an hour, the potatoes will determine how long it takes. I do not use exact measurements because you can adapt this for any number of people you are serving. One tip I do have is to add more salt and pepper than you think you will need, potatoes and steak need flavor desperately.
Feta Salsa
1 cup Feta, cut into small cubes
2 Tablespoons chopped rosemary
3 Tablespoons olive oil
1/2 teaspoon pepper
- Mix in a small bowl and serve

Russet Potatoes

Arugula
salad vegetables - shredded carrots and thinly sliced radishes
Spray oil

Feta Salsa
Bake Potato Toppings - cheese, sour cream, green onions, bacon, ranch, butter
- Preheat the oven to 400 and take the steaks out to take the chill off.
- Scrub the potatoes, dry, and poke holes all over with a fork or paring knife. Place on a baking sheet with parchment or foil. Drizzle each potato with oil and sprinkle with salt and pepper, rotate so both sides are seasoned.
- Bake the potatoes for 45-60 minutes depending on how large your potatoes are. Check they are done if a fork easily goes through.
- While the potatoes bake, prep the steak by patting dry with a paper towel and seasoning with salt and pepper, liberally on each side. Preheat a large skillet on medium-high heat, when hot, add a little oil.
- Carefully place the steaks in the skillet and cook for at least 3-5 minutes on each side. Once the sides have a nice crust, you can flip until desired doneness is reached. Let rest for at least 10 minutes with some foil over the top before slicing.
- With the steak and potatoes done, make the salads, mix the arugula and vegetables, spray with oil, and season with a little salt and pepper.
- Serve on each plate or as a platter, top your potatoes with all your favorites, and spoon the Feta Salsa over the steaks.
I used a New York Strip for my steaks, and like I said, you want to liberally season with salt and pepper. Steak on its own does not have much flavor, salt and pepper actually enhances the flavor. I prefer to use Kosher Salt for cooking, especially for meats, it is a larger grain of salt and the flavor is so good.
