Steak with Honey Butter and Peach Salsa
Easy entertaining is always good, the idea that you can invite someone over for a meal to share without stress or tons of effort. Gone are the days of elaborate dinner parties, replacing them with just plain good food that might be a little different than your usual weeknight fare. And this dinner is the perfect example of that, simply sear or grill steaks and add some extra pizzazz and you have an elegant main dish. This is basic enough that you can enjoy this on a weeknight too, we had ours with just some grilled vegetables and the whole family loved it. You can make the salsa and the honey butter ahead of time to make this even easier. Because honestly, if you are having people over, you want to spend time with them, not worried about a soufflé in the oven.
This recipe was inspired by an anniversary dinner we had last year at Emmer and Rye, they had a honey glazed short rib with peaches and a corn puree underneath. It was amazing and it was just lingering in my mind, but I wanted it to be simple. So this is my humble interpretation of a dish that still makes me drool.
The salsa would be good on anything, in fact, I used it in a salad and it totally took the salad to the next level. It is also no added sugar so if you are doing Whole30, you can spoon it over your steak that has a little ghee drizzle to make it a little more decadent. Whatever way you prepare it, you will get that sweet taste of the peaches with the rosemary and you will be thinking about it for days to come.
Steak with Honey Butter and Peach Salsa
1/2 cup (1 stick) unsalted butter, softened (or plant based for dairy free)
1/4 cup honey
3 ripe peaches, pit removed and diced
3 Tablespoons olive oil
1 Tablespoon fresh rosemary, minced
1/2 teaspoon salt
1/4 teaspoon pepper
steaks of choice, seasoned liberally with salt and pepper, cooked to desired temperature
- In a small bowl, mix the butter and honey together. Chill until ready to serve
- In another bowl, combine the peaches, oil, rosemary, salt, and pepper to create the salsa. Keep at room temperature or chill in the fridge.
- Let the meat rest and when ready to serve, scoop about a tablespoon of honey butter over each steak and spoon salsa over the top.
