Sloppy Jose' Stuffed Potatoes

I love a good Sloppy Joe Baked Potato and I thought maybe I needed a little fiesta twist, enter the Sloppy Jose Baked Potato! I upped the spices, made sure to use sweet potatoes as the base, a drizzle of nut-based yogurt (you know my fave is cashewgurt), and a dollop of guacamole made this super bueno! These are great for a low key get together or any weeknight. You can even cook the potatoes in the crockpot all day, just season each potato and cook on low for a few hours. Then just quickly make the sauce, makes it a less than 30 minute dinner! Serve it with a little salad for a complete meal!
I actually was going to post this for Cinco de Mayo but then I had so many great recipes to share with y'all. You remember that soul warming Albondigas, those fun Loaded Nacho Fries , and we cannot forget the easy complete meal of the Salsa Pork Fiesta Dinner. I am a California girl now living in Texas so what can I say, Mexican inspired food is in my veins?! This is great for your Whole30, packed with flavor and not a ton of work. Perfect for meal prepping too, just make the sauce and a few potatoes for a delicious lunch or dinner. You could easily make this vegan by swapping the ground beef with some cooked lentils. That way, all your amigos and amigas can enjoy a Sloppy Jose!
Sloppy Jose' Stuffed Potatoes
1 tablespoon olive oil
1 medium onion, diced
1 bell pepper, diced
1 lb ground beef
1 tablespoon taco seasoning (make your own mix or find some compliant blends)
1 teaspoon garlic powder
1/4 teaspoon all spice
14.5 oz can petite diced tomatoes, drained
7 oz can diced green chiles, drained
1/2 cup red enchilada sauce, compliant
1 teaspoon salt
4 sweet potatoes, washed (you can also use russet potatoes)
olive oil, salt, and pepper for potatoes
Toppings: nut yogurt, guacamole, cilantro, avocado, squeeze of lime, green onions
- Preheat oven to 400. Pierce the potatoes all over with a fork or paring knife, place on a baking sheet. Drizzle with oil, sprinkle with salt and pepper and rub all over. Bake for about 1 hour. Alternatively, "bake" them in the slow cooker with this method from Super Healthy Kids.
- In a large pan, heat the oil at medium-high heat, add the onions, saute for a few minutes, then add the peppers, cook until slightly browned. Add the beef and cook until browned.
- Add the spices, taco, garlic, and all spice to the beef mixture, cook for a couple minutes. Pour the canned ingredients, tomatoes, chiles, and enchilada sauce, and stir. Season with salt to taste.
- Once the potatoes are cooked through and tender when you poke with a fork, take out of the oven. Slice lengthwise on the potato and open. Pour some sauce into the potato and top with your desired toppings!
Onions and peppers, best amigos! Saute the onions a few minutes, then add in his buddy!
