Slow Cooker Dairy Free Creamy Pesto Ranch Chicken
I have been seriously lacking on my posting here so I thought I just need to get one of these easy recipes on here. This is a recipe you will want to make over and over, it is simple, takes only a few ingredients, no prep to get it into the slow cooker, and it is deliciously family approved. This is a riff on one of those viral pins on pinterest with the terrible photos from when Pinterest was first born. But despite the bad pictures, a million and one people made the recipe and discovered it was amazing.
So here I use dairy free pesto and cream cheese along with my famous Onion Ranch Seasoning. I know everyting that is in these ingredients and they are perfect for my family. Use what you like for your family, you might not have a dairy issue, so use some Philly! Ultimately, this is perfect for sport practice nights, easy dinner with company, or even as a meal prep for the week. My kids devoured it and loved it with pasta and peas. There are lots of ways to enjoy it so again use what your family will love!

I love a recipe where you just throw everything together and let it do it’s thing and this is definitely one of those recipes. I used Trader Joe’s vegan pesto for this and their dairy free cream cheese. I always have my Onion Ranch Seasoning on hand because it is just so good. Other than that, you just need chicken, salt, and pepper!
The swirls of the cream cheese and pesto are just so pretty!
And there she is, not the most gorgeous but dang it is delicious. I served mine with spagetti and peas but have made some epic pesto chicken sandwhiches with it too. Just get a ciabatta roll, drizzle a little olive oil, salt, and pepper, broil for a few minutes until browned. Then spoon this on, top with some roasted bell peppers, and a slice of cheese, melt it under the broiler, and BAM! Heaven on a plate.
