Turkey Club Burgers

This is such a freaking delicious burger, you must make it right away! Perfect for those hot days, gatherings, back to school cray nights, and when you just need a flippin’ burger. Funny story, when Ainsley was 2, she was moody and said “I just want a flippin’ cookie!” and B and I about died from laughter and we gave her that dang cookie because sometimes your kid earns a reward for being funny. Anyway, back to this burger, I was traveling and we had a turkey club sandwich and I forgot how delicious it was and thought, I need to make this into a burger STAT! B and I actually shared a leftover club sandwich at the restaurant we met at the first time we had a real conversation *insert heart eyes*.

The patty itself is super basic, only a handful of ingredients, but the accoutrements make it that classic flavor you want. Sliced tomatoes, lettuce, avocado, and a thick schmear of mayo on a bun (I love it on a whole wheat bun) or wrapped in that lettuce if you are low carb, paleo, or Whole30. My kids devoured this and the hubs was impressed that my idea panned out (he should be used to it by now, I mean, DUH!). This is great to prep and have chillin in the freezer, it makes 6 good sized patties, for quick dinners or prepping for parties.

Turkey Club Burgers

  • 2 pounds ground turkey

  • 6 slices bacon, cooked and chopped finely

  • 2 scallions or green onions, sliced

  • 1/2 teaspoon black pepper

  • 1 teaspoon salt

  • Serve with: buns, tomatoes, avocado, mayo, lettuce

- Mix the turkey with the bacon chunks, scallions, pepper, and salt in a large bowl. Divide into 6 patties and place on a wax paper-covered baking sheet.

- Freeze all the patties for at least 30 minutes to firm up.

- Grill or cook the burgers in a avocado oil sprayed pan until they are cooked through.

- Serve with your desired toppings.
