Banana French Toast Sticks

French toast is a family favorite here, all that soft inside with the crispy edges and warm for any morning. My oldest got hooked on it when I was about to have my second, I wanted it to be special and I discovered HEB French Toast bread. If you are lucky enough to have an HEB near you, grab it and make French toast, you will not be disappointed. Over time, I wanted to use less sugar in things because as you eat less, you want less. So I was thinking of ways to make our old favorite without the sugar but everyone knows you still need a little sweetness in your FT. Then it hit me, BANANAS! So I swap out the sugar for banana puree and it is so so good. We served ours with a little butter, walnuts, and a drizzle of maple syrup. These are great for kids, they cook pretty quickly and you could even make up a whole batch and freeze it, ready to be warmed up for breakfasts.

Banana French Toast Sticks

  • 2 eggs

  • 2 medium ripe bananas

  • 1/2 teaspoon vanilla extract

  • 1 cup milk of choice, we use almond milk

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • butter or butter spread - 1-2 Tablespoons per batch

  • 8-12 sliced of bread of choice, cut into thirds for “sticks”

- Mash banana in dish and whisk all ingredients other than bread and butter.

- Heat a large skillet on medium heat and add 1-2 Tablespoons of butter or butter spread until melted

- Dip each bread slice or stick into the mixture and cover on both sides. Let the excess drip off and place in the melted butter in an even layer, make sure not to crowd.

- Cook until golden brown on first side, about 3-5 minutes, then flip over and cook until the other side is browned. Remove and place on a plate or baking sheet while you finish the batch.

- Serve with maple syrup, nuts, almond butter, chocolate chips, or whatever sounds delicious!

Get all the stuff together, that banana is really ripe so I just chunked it and then mashed it all together with the egg and almond milk mixture. Use your favorite bread, gluten free, seedy, whole wheat, texas toast, whatever you have, it will work!

Whisk it together, heat some butter (we use Earth Balance Soy Free), dredge the bread in the egg mix on both sides, then place in the heated pan with butter. Flip when the sides are golden brown.
