Onion Ranch Chicken Salad
This chicken salad was born with the leftovers of the Slow Cooker Onion Ranch Chicken and I loved the seasoning so much, I added more! I warned y'all I'm a little obsessed with the mix and use it all the time! We had a warm day and the leftovers for lunch did not sound as good as a cool and crunchy chicken salad. I whipped this up and we were in love instantly, I honestly can't wait to make this again!
Chicken salad is so versatile too, you have so many options on how to get it into your mouth! Of course there is the standard sandwich with bread but being on Whole30 has opened my mind to so many other options. Crackers (my faves are Simple Mills), cucumber slices, mini pepper boats, lettuce or collard sandwich wrap, tortilla, celery boats, jicama tortillas, sweet potato toast, or just by the spoonful! Not all of these are Whole30 but they are all fantastic choices! We had this for a few lunches and as a part of breakfast too, perfect for a little pre-workout snack.
Onion Ranch Chicken Salad
- 3 cups cooked chicken, chopped
- 2 large celery stalks, chopped
- 1/2 large bell pepper, chopped
- 1/4 red onion, small dice
- 1/2 cup mayonnaise
- 2 Tablespoons Onion Ranch Seasoning
- couple dashes of hot sauce
- sprinkle of salt and pepper to taste
- Combine everything in a bowl and enjoy!
