Nicoise Dinner

If you need a simple dinner that has it all and comes together in just a little bit of time, this Nicoise dinner is here. It has some cold stuff, roasted veggies, and seared salmon to take care of all your protein, veggie, and fat needs. Plus, other than the olives, my kids took this dinner down without prodding to take another bite! This is a riff on the French classic of Nicoise salad, I wanted something with most of the elements but super family friendly. And I made it mama/daddy friendly as well with it coming together in 30 minutes!
This is more of a blueprint for a dinner than a recipe, adapt and change for the number of people you are feeding or eating preferences. I would not leave out with crispy carrots though, a happy accident of having shredded carrots turned into one of my favorite components. This is also incredible to meal prep and have for lunches throughout the week.
Nicoise Dinner
Salmon - 6oz portions each meal
- Heat a skillet on high heat with oil. Season the salmon with salt and pepper and place flesh-side down to sear. Flip oven when there is a browned crust and the fish lifts easily. Sear on skin side until crispy or cooked through. You might need to place the pan into the oven for a few minutes to cook the salmon through.
Roasted Potatoes - use mini potatoes, about 10 for each serving
- Heat the oven to 425. Toss the potatoes in oil, sprinkle with salt and pepper. Bake for about 25 minutes, shaking the pan mid-way to check for doneness. Poke with a fork to confirm they are tender.
Crispy Carrots - 10oz bag served our family of 4 with leftovers
- In the same 425 oven as the potatoes. Toss the carrots with a little oil and a sprinkle of salt and pepper. Roast in the oven until crispy, about 15 minutes, stirring halfway through
Roasted Green Beans
- Same 425 oven as the carrots and potatoes. Toss the beans in oil, sprinkle with salt and pepper, add to the pan with the potatoes. Roast in the oven until tender and a little browned, about 15 minutes, stirring halfway through
Hard Boiled Eggs - 1-2 eggs per serving
- Bring a pot of water up to boiling. Slide in the eggs carefully and cook for 12-13 minutes for hard boiled or 7-8 minutes for a jammy center. Drain and place into an ice bath to cool down. Make a bunch for meal prep, you won't regret it
Olives - a handful per serving
- Buy your favorite kind!
