Steakhouse Salad
I love going to steakhouses but dang are they expensive and you are just paying for every little thing there. One night, I wanted a steakhouse dinner without the cost or the effort of recreating it all. So, I gathered some of my favorite things to get at a steakhouse and put them together as a salad. It turned out amazing, a salad husbands will not question where the rest of dinner is. My kids loved it too, just without the greens. You can adapt it to work with your favorites, love the potatoes, roast thin slices and you have a meat and potatoes dinner. This is so fun as a salad because the leftovers are just as good cold the next day! This happens to be low carb and gluten free (if you get the right crispy onions or swap for crispy bacon) for a dinner that will become a favorite.
Steakhouse Salad
New York Strip or steak of choice
Spring Mixed Greens
Asparagus
Mushrooms
Crispy Fried Onions
Blue Cheese
Balsamic Glaze
Salt and Pepper
Steak - bring to room temperature, season liberally with salt and pepper. Heat a pan to high heat and then add oil to the pan. Carefully place the steak in the pan and let cook on each side for a few minutes, until there is a nice brown crust and is cooked to the desired temperature. Remove from pan and let rest, covered with foil until ready to slice.
Asparagus - trim the tough end of the asparagus and toss with oil. salt, and pepper. Roast in the oven for 10-12 minutes
Mushrooms - remove stems and slice. Heat a pan to medium-high heat, once hot, add oil and mushrooms. Cook until browned, stirring occasionally, and then season with salt and pepper.
Salad - Place the greens at the bottom and top with remaining ingredients. Toss with your favorite dressing or just olive oil.
