Turkey Veggie Hash

Make ahead breakfasts are a game changer, you can make a big batch of something and have it in the fridge waiting for you throughout the week. This is one of my favorite things to make a batch of, especially with all the tomatoes we have in our garden. Hashes are the way to go, you can use up whatever you have in the fridge and toss it together and have something DELICOUS. This can also be a great lunch or dinner, however you serve it, it is perfect for our busy lives. This is another not-a-recipe recipes but the way I made it here, it is gluten free, dairy free, low carb, and Whole30. Make it vegan with some plant-based crumbled and you will have a filling start to your day!

Turkey Veggie Hash

  • 1 pound ground turkey, or meat alternative

  • 1 small onion, diced

  • 1 Tablespoon oil

  • 1 bell pepper, chopped

  • 2 small zucchini, chopped

  • Handful of cherry tomatoes

  • salt and pepper

  • 2 Tablespoons Onion Ranch powder

Heat a large skillet at medium-high heat, once hot drizzle a little oil of choice, add in the onions and turkey and season with salt and pepper.

Once the meat is browned and the onions are translucent, add in the remaining vegetables and stir. Sprinkle some Onion Ranch Powder and let cook until the tomatoes have burst.

Serve with eggs, fruit, or whatever you like!

These are the things we always have in our fridge and they taste so good together! Make it with what is in your fridge, I’m sure it will be delicious.

I like to chop the veggies while the meat and onions are cooking, one pan, a cutting board, and a knife is all you need!

Toss it all together and cook on medium heat, sprinkle with the seasoning, and that’s it!
