Zucchini Pizza Fritters

Pizza is always a fun meal but sometimes you wish there were more vegetables your family would eat, enter the zucchini pizza fritters. They are packed with pizza flavor, super easy and fast to get together, gluten free, and have a lot of zucchini. They are crispy but you bake them in the oven so no frying splatter all over. Perfect to pack for lunches, appetizers for gatherings, and easy dinner with a salad on the side. They happen to be low carb as well and you can easily made it vegan and dairy free with plant-based cheese and pepperoni. My family loved these and wanted more. Perfect to make a big batch and freeze for future on the go meals. Just warm in the oven so they stay crispy. Serve with the Ranch Pizza Sauce that makes it even more delicious, everyone likes to dip things so it’s a no brainer.

Zucchini Pizza Fritters

  • 4 cups zucchini, shredded and liquid squeezed out

  • 1 teaspoon salt

  • 2 eggs, beaten

  • 2 teaspoons minced garlic

  • 1 cup almond flour

  • 2 Tablespoons grated parmesan

  • 2 cups shredded mozzarella

  • 1 Tablespoon Italian Herbs

  • 1 cup chopped pepperoni

Ranch Pizza Sauce

  • 2/3 cups pizza sauce

  • 1/3 cup yogurt

  • 2 Tablespoons Onion Ranch Seasoning

- Preheat the oven to 425 and prepare a baking sheet with parchment paper and spraying with oil or drizzle with oil and spread around.

- Mix all the ingredients together in a large bowl.

- Scoop zucchini mix into balls onto the parchment then flatten with your hands to make patties.

- Spray or drizzle with oil on top and place in oven. Bake for 15 minutes, then flip over and bake an additional 12-15 minutes or until browned and crispy.

- Serve with Ranch Tomato Sauce (just stir together in a bowl) and reheat in the oven to ensure crispy fritters.

This is all you need for these babies. So easy and I personally have all of these items on hand all the time.

It is super important to get as much liquid out of the zucchini as possible so they don’t get soggy patties. I like to shred it and place in a kitchen towel and pull it together and squeeze, I probably got close to a cup of zucchini water out of these!

Grab your parchment covered sheet and drizzle or spray with oil. This will allow the fritters to “ fry” without making a mess.

I love using a scooper for these types of items but a measuring cup would also be a great way to portion the evenly.

While the fritters are in the oven, mix up your Ranch Pizza Sauce, three ingredients and it is so good. Serve room temp or warm.
