Pineapple Refresher
I don't know if I am the only person, but when the weather gets warmer, I want cocktails. Even better if I am enjoying them on my patio. I have been pretty good about not drinking a ton during this quarantine but now it’s warm and I want a cool drink in my hand while my kids fight and scream,. School is officially done as of yesterday and after homeschooling them for a few months and just going into a few more months at home, this mama deserves a drink.
I saw an idea for a kids drink of pineapple lemonade and I was like, that sounds good, but with some mama juice in there! I also love when my drinks have a little bubbly, I tasted the new La Croix flavor and was like, yaaaaasssss, here is what I am going to use. Pineapple juice, some lemon bubbly, and the go-to tequila and Cointreau of margaritas, and BOOM! It is strong, delicious, refreshing, and everything I want in a summer drink. So make yourself a drink for yourself and a friend and relax, its summertime. You can even prep a carafe of it by multiplying the pineapple and booze mix for a party!
Pineapple Refresher
Makes 2 drinks
1 can (6oz) pineapple juice
4 oz Tequila
2 oz Cointreau
Ice
Lemon Sparkling Water (I like the La Croix Limoncello)
Garnish with pineapple, lemon, mint
- Mix the pineapple juice, tequila, and Cointreau together. Pour over ice and top off with sparkling water. Garnish as desired.

Pour in the pineapple juice, tequila, and Cointreau and mix it all up. I use a measuring cup with ounces marked.
Grab your ice and put it in your glass. I got these cute glasses at Target Dollar Spot years ago and love them for all kinds of drinks, including wine and cocktails.
Pour the juice and booze mix over the ice, splitting between the two glasses.
Ready for the bubbles!
And top off with your lemon sparking water. I love the new La Croix Limoncello flavor. Now just garnish and drink away!
