Cinnamon Sugar Glazed Nuts
I remember we went to Disney World and tried their roasted cinnamon sugar pecans and our world was rocked. The sweetness was delicate and delicious. I wanted to make something similar at home but I know there are like a billion recipes online for them. Why not make them glazed, add another spice, make it paleo, and use my trusty slow cooker. This recipe came together beautifully, a cross between a brittle and warm nut, it is addictive. Perfect to bag up and spread some holiday cheer with. What makes it paleo is the use of an unrefined sugar, I promise you won’t miss the usual stuff. Alternative sugars and flours are so common now, I grabbed my coconut sugar at Target!
Cinnamon Sugar Glazed Nuts
1 egg white
1 Tablespoon vanilla extract
2 cups raw almonds
2 cups raw pecans
1 1/2 cup coconut sugar
2 Tablespoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon salt
2 Tablespoons water
- Spray a slow cooker with oil or use liner.
- Whisk egg whites with the vanilla extract until frothy in a large bowl. Add the nuts and completely coated. Pour into the slow cooker.
- Add the sugar, cinnamon, cardamom, and salt and toss until all combined.
- Cook on low for 4-5 hours, stirring every hour. At hour 3, stir in the water and cover again. The outside will be hard and glossy.
- Spread on a baking sheet covered in parchment and let cool. Break apart into chunks and store in an airtight container.
These are paleo because I use coconut sugar, an unrefined sugar. Only a few ingredients and your house will smell like heaven.
Frothy egg whites and vanilla help the spices and sugar stick to the nuts.
