Blue Cheese and Mushroom Gnocchi
There’s this blue cheese baked spaghetti that we love and I thought, how can I make this even easier. I wanted to use gnocchi and not just any gnocchi, that cauliflower gnocchi from Trader Joe’s everyone loves. But make sure to not use the cooking instructions, those are terrible, roasting them is the easiest way to get them crispy and perfect. This is the perfect small gathering holiday meal, it’s decadent, delicious, and easy. Want to up the protein, add some chicken or steak. This is beautiful enough to make for a date night or for a dinner with friends. It also happens to be low carb, vegetarian, and gluten free. It is easy enough to make on a weeknight too so what are you waiting for?
Blue Cheese and Mushroom Gnocchi
2 packages frozen cauliflower gnocchi
2 Tablespoons oil, divided
1/2 teaspoon salt
1/2 teaspoon pepper
8 oz mushrooms, sliced
1 teaspoon minced garlic
3/4 cup blue cheese crumbles
1 cup cream
salt, pepper, and fresh sage to garnish.
- On a baking sheet, combine the cauliflower gnocchi, 1 Tablespoon oil, salt, and pepper. Preheat the oven to 400.
- Bake the gnocchi for 35 minutes, stirring at 20 minutes.
- While the gnocchi bakes, make the sauce. Start with a pan on high heat, add the oil once hot and then the mushrooms and brown them. Add in the garlic and season with salt and pepper. Pour in the whipping cream and sprinkle in the cheese. Stir and let simmer on low heat.
- Once the sauce has thickened and the gnocchi is browned, mix together and sprinkle with thinly sliced sage.
Only a few ingredients to make a decadent and delicious dinner.
Slice your mushrooms up
Get them nice and browned with some garlic at the end.
Pour in the heavy whipping cream, there are some great plant-based ones now if you need it.
Crumbled blue cheese makes this dish amazing
Stir it up and let it simmer and thicken.
Just look at that goodness, now a little bit of sage to bring it all together
Pull out those crispy gnocchi, this is the easiest way to get them this way.
