PSL Smoothie
I know, I know, Pumpkin Spice Lattes are the drink of Basic B*tches, but darnit, they are delicious. A little too sweet for my liking but now there are so many pumpkin spice flavored things, you can make it exactly how you love it. The weather here is all over the place, in fact yesterday we were all in sweaters and today my kids are playing with the hose in bathing suits.
Anyway, I found a way to enjoy this goodness, no matter what your Fall weather looks like. Smoothies are a year-around love so you can always make your smoothie for the season. This has a bit of coffee, we don’t drink coffee anymore, but tea that tastes like coffee, so we can enjoy this anytime of the day. But if you need that caffeine jolt, this is perfect. Plus there is a hidden vegetable that I promise you will not know. My husband asked what was in it and I only told him after he drank the whole glass!
This recipe makes two half glasses or one large glass so you can have it for breakfast or a little afternoon treat. To make it more substantial, add some vanilla protein powder. This is vegan and actually Whole30 so you can totally enjoy this!
PSL Smoothie
3/4 cup coffee
1/2 cup unsweetened Pumpkin Spice creamer
1/3 cup frozen riced cauliflower
1/2 cup pumpkin puree
1/2 teaspoon pumpkin pie spice
1 frozen banana, in chunks
1 Tablespoon maple syrup, optional
1 scoop vanilla protein powder, optional
- Place everything in the blender and blend until smooth.
Grab yo blender and your stuff. I love smoothies because they are so easy.
