Indian Spiced Sheet Pan Chicken
I have always loved Indian flavors, from when I was young and the love has never stopped. When I was growing up, I had several friends with Indian heritage and I loved to watch Bollywood movies while their parents would serve up traditional dishes. When I was in college, there was this great little restaurant that had an all you can eat buffet lunch for only $9. That was a total dream for a broke college kid and it was soooooo yummy. Then as an adult, I worked in Denver and there was a fabulous Indian place that was a favorite for lunches with my co-workers.
I have only tried my hand at one other Indian flavored dish, because let’s be honest, I am certainly not of Indian descent and those flavors are not in my repertoire. But I thought this was a great way to introduce my kids to the flavors in a way that is familiar to them, we will work up to Indian restaurants. This meal comes together in no time and my family absolutely loved it. My girls ate it in record time and the leftovers were amazing. This is pretty enough to make for company and easy enough for a delicious meal prep. Just make sure that you make that Raita, it is the perfect creamy and cool component to the meal.
Indian Spiced Sheet Pan Chicken
4 pounds bone in chicken pieces
3 Tablespoons Indian Spice Mix
1 lb small potatoes, halved (sub broccoli for low carb)
1 head cauliflower, chopped into florets
3 bell peppers, roughly chopped
1/2 small red onion, roughly chopped
6 Tablespoons oil, divided
1 1/2 teaspoons salt, divided
1 1/2 teaspoons pepper, divided
- Preheat the oven to 400.
- Rub the spice mix all over the chicken pieces and sprinkle with a little salt. Arrange on two baking sheets. Toss the vegetables with oil,salt and, pepper. Surround the chicken with the vegetables.
- Bake 30-35 minutes until the potatoes are tender and the chicken reaches 165 degrees.
Dairy Free Raita
1/2 cup dairy free yogurt, I used cashew based
1/2 cup finely diced mini cucumbers
2 Tablespoons chopped cilantro
2 Tablespoons thinly sliced green onions
1/4 teaspoon Indian Spice Mix
1/4 teaspoon salt
- Combine everything in a bowl and mix. Serve with chicken.
Rub the spice mix on the chicken, just be aware that the turmeric stains and if you have a white painted nail, it will be a lovely shade of yellow for a while!
Best part is that you just get everything on there together and they roast perfectly. That’s it!
The Raita is also super simple, just mix it all together in a bowl, keep it refrigerated until you are ready to enjoy it!
