Taco Tuna Salad
Before I met my husband, I didn’t really eat tuna salad, but he converted me into a tuna salad lover! He loves tuna melts and I perfected his favorite and it quickly became a hit at home. I remember after his mom passed away, I taught his little sister how to make one because it was such a family classic, she needed to know how to make the basics. Needless to say, tuna salad has a place in everyone’s hearts around here.
I wanted to change it up a little and I remembered that B loves cilantro in his tuna and it was a great kicking off point. We all love anything with a taco flavor so I took those flavors and added it to tuna and mayo. BOOM, amazing tuna salad. My hubs and kids loved this variation and now I am craving a tuna melt with this served on sourdough and alongside pepper jack cheese *DROOLING*… I love that tuna salad is super allergy friendly and is a staple for most nutritional preferences so everyone can enjoy this. If you are vegan, just swap the tuna for slightly mashed chickpeas for a protein packed lunch!
Taco Tuna Salad
2 cans tuna, drained (for vegan, drain one can chickpeas and mash lightly with a fork)
1 Tablespoon finely diced jalepeno, about 1/2 a medium pepper
3/4 cup diced bell pepper
1/4 cup diced red onion
2 Tablespoons chopped cilantro
2 Tablespoons diced green chiles
1/4 cup mayonnaise, whatever your preference
1 Tablespoon taco seasoning
- In a bowl, combine all ingredients. Serve in lettuce cups, on bread, with a cracker, or in jicama tortillas.
Just look at those colors, so pretty.
