Warm Kale Salad
Salads are always overlooked on the menu list but everyone craves freshness in the mess of rich and heavy comfort food. This salad is the perfect balance, it is hearty while still giving you the greens your body craves. I love to have this on the side with a meal or a great starter, it has a great balance of flavors and textures and it is dead simple to make. Perfect for your holiday gatherings! There isn’t much to say other than it is easy, delicious, and everyone can enjoy it.
Warm Kale Salad
1 1/2 Tablespoons oil
6 cups kale, destemmed and roughly chopped
1/2 cup raisins
1/4 cup pumpkin seeds
2 Tablespoons balsamic vinegar
Salt and pepper to taste
- In a large skillet, add oil on medium heat. Add the kale and toss for a couple minutes until slightly softened.
- Move to a bowl and toss with the raisins, seeds, and balsamic. Taste before seasoning with salt and pepper. Serve right away or later!
Grab one of those huge bags of rinsed and chopped kale and make sure all thick stems are removed. Those are nasty and stringy.
Grab all that kale and drop it into a large skillet, the wilting will take just a few minutes, then you just add everything else! So simple.
