Paleo Kids Snack Mix
Back to School season is here!!! School started last week for us and man it has been a whirlwind. My oldest started Kindergarten, which is kind of a big deal, she fortunately wasn't nervous at all, actually quite the opposite. At our school they have a little assessment with the Kinder team to gauge where each child is at academically and socially. My girl saw a trophy in the library and promptly told them that trophies are for the bestest leaders and she will get that trophy because she is going to win Kindergarten. Thankfully the teachers loved her confidence and spirit! She is textbook first born sometimes, it's scary...
But the biggest question I get is what do you pack in your kid's lunches?
If you have been following me on Instagram (if you don't, what are you waiting for? @campbellcomfort) you might have seen my little "rant" about these articles and Pins on Pinterest about these moms who spend over an hour crafting an elaborate scene with healthy foods to encourage their kids to eat vegetables. I think it is absolutely absurd to be honest, if you do that, that is amazing and I commend you. First, there is no mom-shaming here or in any part of my life, this shiz is hard and we are all doing our best and if you want to shine your creativity light and make a banana into a dolphin, you do you girl. But for me personally, I feel like getting my kids food that I feel good about is the best I can do. I make a lot of stuff from scratch and I make sure they have a dinner at the table with all of us every night. And if making stuff from scratch seems crazy, I get you too mama!
Back to school lunches, I don't make them complicated, have some lunch meat and cheese, some veggies, some fruit, and some carby cracker thing. Snacks are kind of hard, I do as many little convenience foods as I can because it is chaos in the morning. Over time, I have altered what I buy to help this mama out. I have ThunderKids bars , some Annie's crackers, Bearitos Veggie Puffs, and lots of fruit, veggie, and yogurt pouches.
I have always loved snack mixes for myself and now my kids. Combining a group of your favorite flavors, textures, and making them sing together. This is super basic and makes a big batch so you can pack a snack for the kiddos to use throughout the week. I love this mix because it has real fruit, some healthy fats in the coconut, and their favorite salty cracker texture with better ingredients. This again uses a group of my favorite brands of convenience foods, just mixed together. This is super easy and I mixed it together in a bowl and then stored it in a storage bag, so basic! Because even if you like to turn sandwiches into lions sunbathing in the safari, you might want an easy snack to pack for those little ones!
Paleo Kids Snack Mix
- 1 box (4.25 oz) Simple Mills Cheddar Crackers
- 1 bag (4 oz) Plantain Chips (Inka Chips)
- 1 cup Apple Chips (Bare Fuji and Reds)
- 1/4 cup Coconut Chips (Dang Caramel Sea Salt)
- 1/4 cup freeze dried blueberries (Target's Simply Balanced)
- Combine everything in a large bowl and store in a storage bag.
