Grilled Potato Rounds

This is one of those super simple recipes that are necessary to have in your back pocket. A little extra to add to your plate that gives incredible flavor. I made these on a whim one night and I was thoroughly impressed, the grill adds so much flavor! It fulfills many criteria: easy, fast, inexpensive, can be prepped ahead, and suitable for all!
I would not call this a recipe really, more of a guide on how to make this dish. It is basic and you can adapt it for how many people you are looking to serve. Once on the grill, be careful they don't fall through the cracks in the grill, you will have extra charred rounds! These taters can be served right off the grill or room temperature, both temps are good. This could be used as a base for a yummy appetizer in place on bread, as a revved up version of potato salad, or a simple side for any weeknight. Kids and adults love em' so get grillin'!
Grilled Potato Rounds
Russet potatoes, scrubbed clean
oil - avocado, coconut, or olive
Salt and Pepper
- Preheat the oven to 400
- Slice the potato into 1/2" rounds, they need to be thicker so they don't get too thin and burn.
- Lay the rounds on a baking sheet and drizzle with oil then sprinkle with salt and pepper. Turn over and repeat.
- Bake for 15-20 minutes, until the potato is tender when you poke with a fork. This is where you can let them cool and be ready for the grill when you are.
- Preheat the grill to medium heat, add the rounds and grill for a couple minutes on each side. Serve!
