Grilled Sausage and Pesto Kebabs
Grilling season is upon us and I have the perfect recipes for your Whole30 approved BBQ. I personally think that Summer is one of the easiest times to do a Whole30, my first round was in July. It is hot so you don't want heavy comfort food, salads sound satisfyingly cool and crunchy, BBQs have lots of compliant options, and it is always good to have a reset when you are showing off the body! Let's be honest though, this mom-bod will only hang out in a one piece, I earned those tiger stripes!
Back to this recipe, what is better than grilled sausage? I mean really, the crunchy charred bits and the juicy insides make it an easy and delicious kebab. Pair it with some vegetables and drizzle some pesto that you had leftover from the Green is Good Pasta and BAM, amazing dinner that will never have guests thinking it is healthy. I also whipped up a simple dairy free creamy pesto dipping sauce that makes this bomb. The thing I love about kebabs is that it is a complete meal with all your veggies and protein. When you pick out your sausage, just make sure you grab Sugar Free, Nitrate-Free Kielbasa like Pederson's Farms variety, I grab mine at Whole Foods.
Grilled Sausage and Pesto Kebabs
Sausage Kebabs
- 1 full No-Sugar Kielbasa Sausage Link, cut into 1" chunks (or your favorite Kielbasa)
- 2 bell peppers, cored and cut into 1" chunks
- half red onion, cut into 1" chunks
- Olive oil and Salt and Pepper
Zucchini Kebabs
- 3 large zucchini, cut into 1" chunks
- 1 pint cherry tomatoes (I like the Champagne variety)
- 1/4 cup Dairy Free Pesto (or your favorite type)
- Salt and Pepper
Creamy Pesto Dipping Sauce
- 1/4 cup Dairy Free Pesto (or your favorite type)
- 1 Tablespoon homemade mayonnaise (or your favorite type)
- 3 Tablespoons cashew yogurt (or other dairy free yogurt or sub sour cream)
- Thread the kebab components onto a skewer. Make sure to soak the skewers if you are using wood or bamboo. Drizzle with olive oil or pesto, and salt and pepper.
- Heat the grill to medium temperature, cook for a few minutes each side, until browned and crispy. Drizzle a little extra pesto on the zucchini kebabs after they are off the grill.
- For the dipping sauce, just combine the three ingredients in a small bowl, serve on the side.
