Mahi Mahi Burrito Bowls
This is one of those non-recipes, recipes, easy to customize, no real measurements, and dead simple. The kind of thing you make for busy nights and you just want the people to be fed, something healthy, minimal effort, and they don’t complain. Now if your crew doesn’t like fish (my kids are seafood obsessed), just swap the Mahi for some chicken, steak, or even tofu. You can prepare it all the same way! This can be adapted in so many ways so it works best for you:
vegan - use taco spiced tofu cubes or some pinto beans
low carb - use cauliflower rice and omit the corn
Whole30 - same as the low carb option
No fish - sear chicken or steak rubbed with the taco seasoning
Already dairy free and gluten free!
This is like a loaded fish taco but all in a bowl for easy eating, bowls of food are just comforting. I find Mahi very filling so it was a great meal, I didn’t need to snack later.
Mahi Mahi Burrito Bowls
mahi mahi filets
1/2 teaspoon taco seasoning for each filet
sprinkle of salt
rice of choice
chile and lime seasoning
shredded cabbage
corn
sliced radish
sliced peppers
guacamole
creamy enchilada sauce - equal parts mayonnaise and red enchilada sauce
cilantro
- Season the fish with the taco seasoning and salt on both sides. Heat a pan on medium-high heat and sear the fish for 2-3 minutes on each side.
- Season the rice with a little chile and lime seasoning. Mix the creamy enchilada sauce together.
- Start building your bowls!
I like to gather all the things and make it a build your own situation, it makes it fun for everyone.
We love Mahi here and I just season it with taco seasoning and salt and then sear it in a hot pan.
Sprinkling some chile lime seasoning will make your rice extra special Just prepare as usual and sprinkle it in when it is done.
Get your veggies! You could even do some fajita veggies but I like the fresh crunch with my fish

Peppers, I love those mini peppers that come out in the Summer
Mahi enters stage left
Sprinkle on some of that sweet corn.
Guac and cilantro and you are done with a drizzle of creamy sauce
