Edamame Salad
Edamame is one of those vegetables that you only have at sushi restaurants but it is really good in a salad. It was the only vegetable my youngest daughter would eat when she was a toddler, which I was ok with, it is packed with protein and it was easy to be portable with. I wanted to make a salad that we would be able to enjoy all summer long and this is Asian inspired but in no way authentic. I threw in some of the family’s favorite vegetables and grabbed a dressing from the store and it was sooooo good. In fact, my 6 year old, asked for me to pack it in her school lunch! This will be my new staple to bring to summer cookouts, it holds well, only takes a few minutes to prep, and it is a crowd pleaser that hits for vegans, gluten free, and dairy free!
I served it with rice and crispy seared salmon and we all inhaled the meal, a sign of a good dinner. But because edamame is a protein powerhouse, you can totally eat this as a light lunch and you will feel satisfied! And if you haven’t tried edamame with your kids, I definitely suggest you give it a whirl, you never know what they end up loving!
Edamame Salad
4 cups shelled edamame, ready-to-eat
2 cups shredded carrots
1 bell pepper, thinly sliced
4-5 stalks celery thinly sliced
4 green onions, thinly sliced
1/2 cup Asian dressing of choice - I used Orange Miso
2 Tablespoons Everything but the Bagel Seasoning
- Toss everything together in a bowl and keep chilled.
I found some fresh and ready to eat edamame at Trader Joes and it was perfect, I just grabbed a couple of packages and was off!
I like giving it all a toss before I add the dressing so it is all combined.
Just look at those beautiful colors, this is great to prep ahead because nothing gets soggy.
Pour that dressing all over. Just grab your favorite Asian-inspired dressing to make it super easy.
And toss! I like to sprinkle a little more Everything Bagel seasoning on the top when I am ready to serve.
