BBQ Chicken Rolls
The other day I had leftover BBQ Chicken and I wanted a quick lunch so I took some of the chicken, a bunch of other stuff, and rolled it up. IT WAS FAB! So easy and delicious, I thought it was perfect to prep ahead for lunches, kids, or even parties. The best part is that it is totally adaptable to whatever you have on hand or how you like to eat. I first tried it with some butter lettuce that was needing to be used and it was so tasty, I wanted to prep one in a tortilla for the next day to see how it worked. It was fantastic the next day! Not at all soggy and packed with flavor, take out the jalapenos and this is a kid-approved lunch box entrée Make a load of these for a party and people will love you forever.
Low carb - use a low sugar BBQ sauce with the lettuce cups or low carb tortillas
Whole30 - omit the cheese and use W30 approved sauce on the lettuce cups
.dairy free - use plant-based cheese
gluten free - use GF tortillas or lettuce wraps
vegan - use BBQ sauce over jackfruit or cooked lentils along with vegan cheese and mayonnaise
BBQ Chicken Rolls
1 pound cooked chicken, shredded
1/2 cup BBQ Sauce
Lettuce cups or tortillas
mayonnaise
1 cup shredded carrots
1 bell pepper, thinly sliced
1/2 cup shredded cheddar cheese
1/2 cup pickled jalapenos
- Toss the chicken with the BBQ sauce. Spread some mayo on the lettuce or tortilla, then top with the vegetables. Place some of the BBQ chicken on top and then sprinkle with cheese and jalapenos. Roll up and secure with a toothpick.

Lettuce or tortilla, spread with mayo, top with carrots and peppers, BBQ Chicken, sprinkle with cheese and jalapenos. Fold and enjoy!
