Curried Cauliflower
I know this seems like an odd combination, in fact, one of my besties thought it sounded like the weirdest thing to put cauliflower and raisins together. But let me tell you, it is EPIC, in fact, I was inspired by a dish we had at Uchiko in Austin, it was part of their tasting menu and we probably would not have ordered it but it blew our minds. Theirs was a bit more refined but this truly captured the heart of the dish and I am so so happy about it. It is savory, sweet, a little heat, and the cashew sauce is a take on a tahini sauce.
My kids even liked this and you know that is something to write about! I served it with a simple roast pork tenderloin but you can make it accompany anything! It is naturally Whole30, vegan, gluten free, dairy free, and if you leave out those raisins, you can have it low carb. It comes together in 30 minutes and only has a few ingredients for each component so you can totally make this on a weeknight or serve it to company. It is unexpected and pretty, so everyone will want a spoonful! The cashew sauce is also epic so whatever you would use a Tahini sauce for, use this, like falafel, over chicken, on roasted carrots, or even as a salad dressing, it’s DELICIOUS.
Curried Cauliflower
1 head cauliflower, cut into florets
1/2 cup raisins
1 jalapeño, thinly sliced
1 Tablespoon Curry Powder
Spray oil
1/2 cup cashews
Salt and pepper
Cashew Sauce
1/4 cup cashew butter
1/4 cup olive oil
juice of 1 lemon
1/4 cup warm water
1 clove garlic, minced
salt and pepper to taste
- Preheat the oven to 400 and place parchment paper on a baking sheet. Spray the oil over the cauliflower and toss the cauliflower, raisins, and jalapeno with the curry powder and some salt and pepper.
- Roast in the oven for 30 minutes or until the cauliflower is tender. While the pan is still hot, toss in the cashews and drizzle with the cashew sauce.
- Place all the ingredients for the cashew sauce in a jar and shake vigorously to blend together. Keep in refrigerator after using for about 4 days.
Cauliflower, raisins, and jalapeno come together for a savory, sweet, and heat you will love.
Spray it all down with oil and sprinkle it with curry powder, salt, and pepper.
And just pop it in the oven. Make the sauce while these roast up. Jar - ingredients - and shake - that’s it! Just scatter the cashews and spoon over the sauce for an epic side dish.
