Cheese Board Log
Cheese and charcuterie boards are all the rage now, they are beautiful and appealing to everyone. A buffet of goodness really, perfect to pair with wine, to start the night, or even end the night. I love cheese boards because cheese is delicious and you can have sweet and savory all together. So I thought about, what if I had a cheese board all mixed together to really get the creamy, savory, sweet, and crunchy in one bite. Enter the cheese log, you could totally do a ball too, I would half the recipe for a ball unless you want an epically large ball. This is perfect for ladies night, Thanksgiving, holiday parties, or even a chill night on the couch. You just whip it all together, roll in toasted nuts, and serve with your favorite board items.
Cheese Board Log
8 oz cream cheese, softened
5 oz goat cheese
7 oz sharp cheddar, I like Unexpected Cheddar from TJ’s
1/2 cup chopped pecans. divided
1/2 cup chopped walnuts, divided
1/2 cup dried cranberries
1/2 cup golden raisins
1 Tablespoon chopped fresh rosemary
- In a bowl, combine in a food processor the cheeses, cranberries, raisins, rosemary, and 1/4 cup of each the pecans and walnuts, until well blended.
- Spread some cling wrap on the counter and scoop the mixture onto one end of the wrap and form into a log with the wrap. Let chill for at least 30 minutes.
- While the log is chilling, place the remaining chopped nuts in a small sauté pan and toast over medium-low heat until warm and fragrant. Transfer to a plate or dish and let cool.
- Once the log is firm, unwrap and roll in the toasted chopped nuts until covered. Place some additional dried cranberries and raisins on the outside. Chill until ready to serve.
Gather all the things you would want on a cheese board and you are going to combine all of it!
All prepped, we shredded the cheddar and chopped the nuts and rosemary down..
Get all that in a food processor and get it blending. If you don’t have a processor, you can just put it all in a bowl and mix with a spoon or a hand mixer.
All blended, you want some chunks still to give it texture.
Now just plop it on your cling wrap and fold it over and form a log. And this is the point where your cheese looks exactly like your countertop…
Now get this babe into the freezer for 30 minutes or the fridge for at least an hour.
While that log is chillin’ grab the remaining half of the nuts and get them toasted. Just put them in a small pan on medium-low heat and stir around constantly until they are warm and you can smell their goodness.
Now grab your toasted nuts and chilled log.
And then roll it all in those nuts. Make it pretty with some extra dried cranberries and raisins. And that is it. Surround it with extra nuts, fruits, and crackers for a delicious board!
