BBQ Slaw
Scrambling for a last minute side that literally takes less than 5 minutes to prep? I gotchu with this delicious, cost effective and dead simple side. This is easy to multiply for as many people possible, easy to adapt for vegans and is free of all those "things". No Sugar, gluten, dairy, soy, grains, and is Whole30, Paleo, low carb, and Keto. So it really is a crowd pleaser with a handful of ingredients.
The BBQ Rub Mix I use is from one of my favorite books, the Big Book of Paleo Slow Cooking. That rub spice mix is bomb and worth purchasing the book just for that. I used it last week on some slow cooker ribs and they were amazing. There are tons of recipes online and mixes in the store, just check the ingredients to make sure it is clean.
BBQ Slaw
- 10 oz coleslaw mix, remove the dressing packet and trash that nasty
- 2 Tablespoons mayonnaise (or 1/4 cup if omitting the cashew yogurt)
- 2 Tablespoons cashew yogurt (or 1/4 cup if omitting the mayo)
- 1 Tablespoon BBQ Rub Spice (I love Perry's Plate version in her Big Book of Paleo Slow Cooking) Check the ingredient list for sugars!
- 1 teaspoon lemon juice
- 1 teaspoon apple cider vinegar
- salt to taste
- Toss everything together in a bowl and then chill for a couple hours. Serve!
