Clam Chowder

Here is something I’ve been making for years and I’m super excited to have updated to be Whole30 compliant, using some amazing products. Clam Chowder is an awesome and easy soup to make in about 30 minutes and is sure to be a family favorite.
Look at that ingredient list on each product, most canned clams have sugar in them. I found @barharborfoods to be perfect for this soup, you can find it at @wholefoods or @heb . The super important ingredient I used was the super creamy @malkorganics cashew milk, without gums or fillers, just nuts, water, salt, exactly the ingredients I’m looking for in my non-dairy milk. @malkorganics was awesome to send me some coupons to try their milks as part of the #gumfreechallenge

Clam Chowder
Serves 4-5
1 medium onion, diced
6 slices
7 small/medium russet potatoes, peeled, half small dice / half large dice
3 cans chopped clams
2 cups milk of choice
1/2 Tablespoon Herbs de Provence
1 teaspoon cracked black pepper
1 teaspoon sea salt, to taste
Pinch of cayenne
- cook bacon on medium high heat until almost crispy
- add onions and sauté until slightly browned
- add the small diced potatoes and stir, you can chop the large diced potatoes now, the small diced will cook faster and help thicken and make the soup creamy
- add the large diced potatoes and stir, dump in the canned clams, cashew milk, and seasonings
- stir and bring to a boil, cover and let cook for a few minutes, until large potatoes are cooked through.
Adjust seasoning to your palate, enjoy!!!
